I've personally only ever used 4 or 8 (there's no specific reason for that decision). 8 MP are a good choice if you're covering a larger area or are using the ultra wide 2.8mm lens; if not 4 MP are fine. Look at the data sheets and they give you some DORI (Detect, Observe, Recognise, Identify) distances that may be of use. If the cameras are connected to a Hikvision NVR you'll need to be mindful of how much bandwidth you have available on that NVR.
