Description

Chocolate– milk chocolate or dark chocolate work well, you can use chocolate chips if you prefer. This is a useful recipe for leftover Easter eggs (yes, it can happen!) or leftover Halloween chocolate too. Roughly chop your leftover chocolates and sprinkle them over the hot marshmallows. Use regular large marshmallows for a snowball cookie recipe. Mini marshmallows are fine too but will make the cooking process longer. This recipe is delicious, easy and a great treat to take as a plate – or lets face it – to eat when the kids are in bed! I had it once at a friends birthday party and the lovely Sarah was kind enough to share this recipe her Mother had given her.

For individual s’mores, you will need: 2 digestive biscuits, 3 marshmallows and 7-10g (.25oz) chocolate. Make them under the grill or in the oven the same way that you would make a larger number of s’mores. My recipe tipsIf the resulting mixture is too dry and does not lump well, add an extra 1-2 tablespoons of condensed milk. Spoon the mixture into the palm of your hand, press down a little. Place the marshmallows on top and wrap them in the cocoa mixture, pressing and forming a ball. Keeping your hands wet will make the process easier. Just place a bowl of water next to you and moisten your palms from time to time. Lamington Icecream Cake A deliciously layered Lamington Ice-Cream Cake inspired by everyone's favourite treat! Take out and carefully sprinkle over roughly chopped chocolate, taking care not to touch the marshmallows as the hot sugar can burn. If you don't have edible marker pens, try using a fine paintbrush with food colourings to paint on the faces instead. Ensure the paint brush is clean and hasn't been used for painting prevously. These Marshmallow bunnies make a great edible craft activity, and you can add the finished bunnies to Easter baskets, Easter desserts, as cupcake or Easter cake toppers or serve them up just as they are for a fun Easter bunny themed treat. If you don’t like caramelised marshmallows on your s’mores, then watch carefully and remove the biscuits from under the grill as soon as the tops of the marshmallows begin to bubble.

Carefully spread the chocolate mixture over the marshmallows and place in the fridge to cool completely before slicing. Step 10 - Cut Slice To make icing, beat butter and icing sugar together in a large bowl with a handheld electric whisk until light and fluffy. Melt marshmallows in microwave in a glass bowl for 20sec bursts until just melted and warm. Stir marshmallow until smooth, then beat into icing with a drop of food colouring, if using.
